Tiki bars just get me! They are fun, vibey, and usually some fire involved, which I fully support. So when I had some time to kill before dinner, I stopped by Swaylo's for a drink... and ended up with a couple of drinks and bites. Now I have to go back for a full dinner! What I tried: Spam Musubi - Grilled Spam, rice, nori, teriyaki & pickled ginger Warm Hawaiian Rolls - Scratch-baked with honey butter Mai Tai - "The Best" blend of aged Jamaican Pot Still rums, Martinique Rhum, Grove Street orange liqueur, lime, almond orgeat Swaylo's Punch - Appleton Estate Signature Jamaican rum, allspice dram, passionfruit, apricot, lime Best bites:The cocktails were on point, especially the Swaylo's Punch as it was fruity, spiced, and dangerously easy to sip.And can we talk about warm Hawaiian rolls? More places need to be doing this because WOW. Oh, and Spam Musubi? Always a win.

Been here twice now. Super friendly staff and love the atmosphere. If you can sit in the deck area..you'll really feel like you're on the ship.Drinks are generous pours and very delicious. Ube colada has been my favorite but that's because I love ube!For food I've had their Poke Bowl (good portion and fresh Ahi), Chicken Katsu and Spam Musubi. Chicken Katsu had good breading but chicken was a little dry. However dipping it in curry was delicious. The Katsu sauce was a little too tangy for my taste. Lastly the rice in the spam musubi was too dry. Could have been an off evening given how busy they get!Definitely get their Hawaiian roll. You can eat it as is or with the butter. Soft with a light sweetness!

Happiest Hours in Longmont: 4-5 pmHappiest place in Longmont: Swaylo's. Perfect Music on a dog friendly patio, beautifully decorated and with comfortable chars. Service was technically good. Not much banter, but very attentive and professional. This is a "Rum Bar." I was not a rum drinker but might be now: $5/Dark and Stormy, a most delightful refreshing cocktail. Great happy hour prices for delicious appetizers. My new Go To in Longmont!!

All you need to know: they turned an Outback Steakhouse into a Tiki bar/restaurant It's hard to imagined until you see it, but the bar area is itself in what appears to be the hull of a pirate ship. So right there, a person would want to go just to see the transformation of the space. Beverages: enjoyed a Lava Flow, a sweet drink that's difficult to make at home because of the ingredients needed. It was delicious. If you are a rum collector, it is likely they will have at least a couple you have not yet tried; the bar staff will be able to guide you. Mug collectors take note, they have their own mug and mai tai glasses for sale. Food: was terrific! They've updated the menu recently, moving at least one favorite appetizer to main dish status. There are choices for a wide range of palates, including vegetarians.

I welcomed a unique for Longmont restaurant and bar by onwers of other successful and wonderful local restaurants. I looked forward to adorable and tasty tiki drinks, food, and service. I even came here to have farewell drinks and food with some of my old team and colleagues. I ended up feeling really bad about everyone's experience. I arrived early. I specifically told the host we had a party of 8 arriving and departing at different times. Some would be eating, some would only have cocktails. The host said there would be no problem. We actually ended the visit quicker than expected. Our server, Gigi, was very pushy and rushed us. She told us we needed to order in x minutes because she needed our table. We asked if we could move. Nope. No options. Aside from the looooovely service (said in my best Blanche Deveraux voice), the food did not meet expectations. Four other people in my party had been there before and stated the food was better during their previous visit. We shared some happy hour bites - spam musubi and edamame. Edamame was good. Musubi was not. The six of us who ate quicker than soldiers in a mess hall, tried various options of big bowls and plates. My Kalua pork was nothing less than an effort to rehydrate dried out pork. Black beans tasted like no salt added Kuner's straight from the can. The sweet potato puree? Gerber's is better.The cocktails? Main menu cocktails were fun and tasty. Happy hour special on cocktails is limited, but pina coladas we had were good.Will I come back? Eh, unlikely & that's OK.
