After spending a week eating the hospital food, I was happy to stumble on this place while taking a walk. Quite a variety of choices from breakfast burritos to aqui bowls. I wish I had found this place sooner!

In a world full of sandwich places, Rosa's stands out on the Anschutz Medical Campus. It's still an offshoot of Etai's, so you know what you'll get: fresh, fast food that is a bit overpriced. But it's so nice to have something different in this area, and they have a great menu full of bowls, tacos, and burritos. They offer both breakfast and lunch here. Service is quick and friendly, and this is primarily a to-go place. They obviously focus on the campus community, since I don't know why anyone would drive to the campus, navigate that, and then find parking just to come here. But for those who work on campus every day or visitors who want something other than hospital food, this is a very good alternative.

Lunch at Rosa's Mexican Kitchen was very good, fast and reasonably priced. There was a steady flow of customers, primarily health care workers from UC who appear to be regulars. I'm sure they go here because the service is fast and the food is good. The hibiscus drink was delicious. The (3) fish tacos were very good. There is seating on the outside patio and a few tables inside.

We got the carne asada here and it was really good! Staff were friendly as well! We also ordered the nachos as an appetizer, but we didn't end up liking them as much. Overall a good experience!

Great Mexican food option. Looks like it is mostly visited by hospital staff. Very clean. Fresh food. While black and pinto beans, rather than refried, which I love. The burritos and tacos were all delicious. Limited indoor seating. Nice outdoor seating for nice days.
