Our friends moved to Thornton recently and have been talking about how awesome primitive is, so they took us to check it out earlier.A very cool but smallish space with their beer barrels for decor. They specialize in lambics and sours and had about 30 beers to choose from if you include bottles. They also have several guest lambics including lots of 3f. I had a scoville stout which was tasty. Not as spicy as expected but with a nice touch of cinnamon. My fiance had one of their specials which was a hot beer served in a coffee mug. It's similar to mulled wine mixed with cider and was really delicious. The bartender was the owner Brandon, who was super nice and knowledgeable about craft beer in the area. Pro tip: it's always cold in the taproom in the winter so make sure you have your jacket.

Went with a group. I preface with sours don't like me. I know this going in. They do have items on their menu that are not sour but spontaneous fermentation is their specialty so if you can, try it! My husband on the other hand is a wild ale fan so he was a happy camper.General consensus from the group we were with was this place would be worth another visit in the future. Everyone seemed to be enjoying their brews.

First, as of right now they are only open on Saturdays. We went this past Saturday. Be aware they only brew 1 type of beer. But they do have a few guest bottles and cans. This place makes lambic style beers and they serve them on cask. The owner was very nice and explained their process of brewing and the styles of beers. When we were there they had 3 beers on cask and 1 beer out of a bag. Then they sold a few beers in bottles that you could drink there. All beers were about 5%. We got a flight of 4. They were all very good. Good flavors. Would def get a few bottles from this place to share with friends. Brewery in a neighborhood/business area. There is street parking. Unknown if they get food trucks or not. They did not have any snacks. But there was a bakery across the street. My favorite beer was Vaguely Belgian Vibes. It was made with cherries. Hidden gem in Prospect! The owners are a young couple and super friendly. We went there with friends and had a blast. I highly recommend checking out their beers and learn about their beer making process. Excited to go back.

It's a really cute place, very nicely done inside, but be sure to ask for a taster first! The beertender explained it is beer made without hops and aged in oak barrels. I don't know anything about primitive beer making so I asked her for a suggestion and I said I'll try it. She poured me a whole big glass. I took one sip and was surprised to find it tasted like straight apple cider vinegar. I guess that would explain the odor we smelled as we walked in. I really wish she would have warned me that this is not like any other kind of beer and suggested a taster first. The rest of the beers tasted the same and the other people in our group didn't like this style beer either. I hope they do well and that other people like this kind of "beer", but ask for a taster first.

Super cool set up with the picnic tables under the industrial shelving, with the decorative lights at night can make it feel romantic. Nice patio and had a food truck the time I was there. Always check their website as they have limited times of being open. As for the beer, barrel fermented isn't for everyone... My fiancé and I won't be back as we didn't find anything we truly liked. They have a very small selection of games to play (which is always a plus to have games in my book). The staff were friendly and let us taste multiple options before making a decision. Overall, a nice unique place that's great for anyone who does like barrel fermented beer, just not for me.

Very cool place with delicious and unique beer. The staff is really friendly and the atmosphere is nice. The beer is unique but I think anyone can enjoy it. Everything I've had is very drinkable but full of flavor. To me the experience is like drinking wine that tastes like beer.

Hidden gem, best cellar menu around, curated taps of well-made beers, impeccable glassware, knowledgeable beer nerd staff, and cool vibes in the barrel room. Vintage barleywines? Yep. American saisons not sold anywhere else? Yep. Hazy IPA? Yep. Lager? Only the best. Oh, and they actually make lambic. Since they reopened "post" COVID, it's become easily one of the best beer bars and breweries in the West.

Lisa and Brandon have really put together something special and unique with Primitive Beer. Lambic inspired spontaneous fermented beers?....in Longmont Colorado!?....and all the ingredients are sourced out of Colorado?!?!?!? This is a place that is freely open for everyone and anyone to enjoy. During my visits I've certainly seen my share of beer aficionados but also just folks looking to try something different. Both owners have full time jobs and pretty much all of their free time goes into this passion project. I highly recommend swinging by to check it out if you get the chance. It's always a very welcoming place and the two owners are simply delightful!
