Pasque is a new restaurant on the ground floor of the stunning Populus Hotel. It's a beautifully designed space utilizing reclaimed and recycled materials. I met a friend here from out of town and our experience was flawless!They are open for breakfast, lunch, and dinner. The menu has some starters, mains, sandwiches, and salads. For a new hotel restaurant, I couldn't have asked for more from my dining experience.SAVORY BEIGNET // Spinach, Artichoke, Fontina, Espelette Pepper, Honey. These weren't on my 2024 bingo card, but holy shit! The texture of these were impeccable. Ridiculously crispy on the outside and tender on the inside. Definitely order these for the table!PORCHETTA SANDWICH // Griddled Sourdough, Roasted Pork, Provolone, Kale, Aioli, Green Salad. There are lots of great places to eat sandwiches in Denver, and I wouldn't have expected to find a GREAT one here. But damnit, this sandwich was executed to perfection. You won't find porchetta on too many menus, and the meat was delicious. Pair that with PERFECTLY TOASTED sourdough (from Rebel Bread) and I was in heaven.Really really glad I had the pleasure of dining here at Pasque. For a refined lunch with table service in a trendy setting, I can't think of a more ideal place to eat for a weekday lunch. I'm sure dinner service is just as special!

As a food waste/food insecurity researcher, I was excited to support this place. We made a prepaid reservation for a four-course meal at 7:45 PM on Valentine's Day, which included a strict cancellation fee if canceled within 48 hours.We arrived on time and were not seated until 8:40 PM. This should have been an indication of what followed. After paying over $300 in advance, I expected at least an apology for the absurd wait.Long story short: we finished course one at 9:30 PM and didn't get our check until 10:55 PM. The food was mediocre at best, though the drinks were great. Our server was kind, and a manager (?) stopped by a few times to placate us. We still tipped well--on top of the included and prepaid gratuity--because, at this rate, the restaurant won't be around for long, and the staff will soon be looking for employment due to poor leadership.They already had our money, so there was a clear disregard for the service provided. If their mission and business model are genuine, I respect their commitment to sustainability and reducing food waste. However, these efforts would be far more impactful if paired with a focus on the customer experience.

There was not a $$$$ spared on Pasque, flooring to the decore in windows; including full glass entrance, winding stairwell to sip coffee from the Barrister while waiting for your dinning seat or time off, relish kick back in more than urbanity.I met, in passing, a very Stylish gentleman, who is a realtor developer and "Part of Pasque," as he stated, he did defined the "Kick-Back Luxury!Aspen and I were escorted to our small low seated marble table, no expense was dispensed with in building and design of Pasque, including the tasty morsels of food.I had the "Savory Beignet" which are normally sweet, these were Crips (as they ought to be) on the outside, with a melting Spinach Artichoke Fontina. Soon as the Beignet touched my watering tongue, the moment was a melting Organism, including the slightly peppered honey sauce! Ingenious to perfection, H/T to the Chefs. (I am French!) My waitress was Charming with a beautiful smile which never left her face, served in appropriate timing, although they were short staffed; cannot complain!Valet parking, if one chooses, or across the street parking lot, one fee $18.00!!!!Denver required a true Fashion Statement for dinning with delicious scrumptious food (building up to NYC/Miami Stylish savour). The Building in itself is representative of what any person will find inside, from the entrance doubled full standing window auto-swing doors, through the sweeping stairwell. Expect a short wait, (have reservations !!!) your pleasurable dinning experience is worth every moment of your time. Perfect before or after a DCPA or any event.And remember, you are paying for all of the "Chi Chi" yet not over scaled! $$-$$$ per person.

We came here for dinner on a Thursday night, the place was packed. Love seeing new places take off, al though by 8:30 it was quite empty. Valet was complimentary, on a snowy night what a treat. The open space and windows give it a nice atmosphere and great light even on a dark, winter night. The bar is also a great spot, and I would definitely have dinner there. The service was good, but a bit off once the meal got going. It started out fast and then was very slow at some point. Overall, our waitress checked in, the plates were changed for each dish, wine was flowing. I think the kitchen just is figuring things out. The food:SAVORY BEIGNET were more like croquets but were good. The outside crispy, the inside tender and the sauce with kick was a nice surprise. VEGETABLE TARTLET was a disaster and we sent it back. It was served cold but it really didn't come together. The filling was so watery it just ran out when you cut into it, the raw vegetables on top didn't work. Poor concept and execution. STONINGTON MAINE LOBSTER was delicious, light and tender. Great dish and a pretty generous portion for sharing. RYE TAGLIATELLE had great flavour and could be a dinner sized portion for one. It did come out a bit luke warm, and the meat could have been better incorporated, it was too chunky for an elegant dish. ALASKAN HALIBUT fell a little flat for me. The fish was tender and moist, but somehow the dish came out bland and didn't live up to the description. While mushrooms can be a nice pairing, it didn't work. We had cocktails and wine and ended up hanging upstairs in the lounge area for a bit. Would be nice to have a bartender there or service for drinks. Great spot for date nights or small adult groups for dinner.PLEASE UPDATE YOUR DESSERT MENU, IT'S NOT ACCURATE!!!

Very inventive menu and everything we had was good,some spectacular! Started with the beignets and vegetable tart. I must admit that while they were good, we expected more from the beignets. The sauce elevated them but we didn't really taste the cheese. For middle course we had the mushroom option and it was fabulous, as was the halibut main course! Service was excellent! Decor very fun with hides hanging from ceiling over the bar.

This is the main restaurant in the very new Populus Hotel. It has barely been open for two weeks, yet our experience at dinner was seamless and fantastic. Pasque refers to a native Colorado wildflower.The space is gorgeous with various reclaimed and recycled materials, huge windows, and extremely comfortable seating with lots of large booths. The restaurant itself is not that large--you enter past a long bar with some bar seating. There's also a large, open kitchen.The staff was terrific; very friendly, quite competent, and with a good knowledge of the menu and the wine list. Both are relatively short with the intention of rotating items as the seasons change.The waiter recommended the savory beignets which were fried balls filled with spinach, artichoke, fontina cheese, and espelette pepper. They were coated with what seemed to be a honey balsamic glaze and sat in a pool of remoulade sauce.I didn't think beignet was quite the right term as these were more like arancini (fried risotto balls); however, whatever you may call them, these were phenomenal. They were perfectly fried with soft interiors and an absolutely amazing combination of flavors.My friend and I gobbled them up and were blown away. A really excellent dish. There are five golf ball-sized pieces per order and they are very rich, so I suggest sharing.My friend then had the Stonington Maine lobster which had been carved up into bite-size pieces and was served with braised celery, celeriac, apple, and smoked veloute (white sauce). The portion looked a bit small to me (although the price was very reasonable for lobster), but he said the amount was perfect and that the lobster and other ingredients were very fresh.I had the tagliatelle which came with a Colorado lamb ragu. The pasta was perfectly cooked and the ragu was very flavorful with many tender chunks of lamb.I also had a glass of the Presqu'ile Santa Barbara County pinot noir. I am not familiar with this winery, but I do like California Central Coast pinots and this one was excellent and very reasonably priced.All-in-all we had a terrific experience. Hard to believe the kitchen and staff had their act so well together after such a short run. Note the hotel is on a triangular lot surrounded by busy streets, but there is an excellent valet station with a parking lane on the 14th Street side of the building. The entrance door leads directly to the restaurant on the left and the hotel lobby on the right.

What a great spot to grab a drink with friends or significant other. Great restaurant in the hotel populous located in downtown Denver. Amazing service. The bartender was knowledgeable about the hotel architecture, drinks, and dinner menu. Offered suggestions based on asking me a few questions about what I like in a cocktail. I made the reservation thru my OpenTable app for 7am on New Years Day since I was spending New Years Eve at the Populus hotel. I was the first customer to arrive and had my choice of seating. I sat in the middle with full view of the bar. After having a feast the night before with alcohol, I chose a lighter meal. I ordered a hot matcha latte from Little Owl Coffee bar on the first floor of Populus. It was freshly made with hand ground matcha leaves. I got the Scramble toast on toasted sourdough bread with a spicy veggie mix and a bowl of Five Freedoms vanilla skyr (icelandic style yogurt) with fruit preserves and granola. A great start to 2025. I was served by Miguel U. He said reservations are not required for breakfast and rarely for lunch. Dinner almost always needs a reservation.

Amazing dinner at the new @populus_denver hotel @pasque_denver the ambience is sophisticated yet casual. Service attentive and very knowledgeable. Loved our seat near the kitchen watching the chefs prepare the amazing food. I love that our server had great suggestions and told us when we were ordering too much. Portion sizes are good. We started with drinks- the hibiscus cooler (NA) and the Bond villain (like a vesper). Both perfect. The savory beignets are crispy outside and creamy inside with artichoke, spinach and fontina served over an espelette pepper honey sauce. Everything was perfect but I actually preferred the beignets without the sauce to really taste them. The crab soup (that's a split pictured) was light and refreshing with the dill oil. The beef tartar had the finest meat and mushroom minced with black garlic. The lamb tagliatelle was over the top! Housemade noodles with the best chunks of lamb, ricotta salata and mint. This place is a must stop when in Denver! I would give it more then five stars if I could!

I was seated down at the bar while waiting for the rest of my party to arrive for Stellar Jay upstairs and I must say I wish this was the restaurant on the roof!! The menu looks fabulous and the hibiscus cosmopolitan was far better than the cocktails we had upstairs. The bartenders were so friendly and the restaurant was beautifully decorated. I have been stalking their menu for weeks and it always looks amazing.
