I don't know how this place stays in business.I went here for the first time the other night and it was abysmal. I don't leave a lot of reviews for businesses ever, even when the service isn't great, but this was just inexcusable. If the service had been even halfway decent I would have just brushed off all the other short comings.My waitress couldn't have been less involved in waiting on me. Every time I ordered something she'd just disappear for lengthy stretches of time. They weren't busy either, it was basically one waiter per table, they could have cut half the staff, the place was empty.I ordered an iced tea and instead of bringing my drink out with my chips and salsa she waited to bring it out with my meal, I'd assumed the forgotten it. My dish said it came with sour cream but they forgot it so I asked her for sour cream, she didn't remember to bring it to me til I had one bite of food left and I ate really slowly hoping it would arrive at some point.I asked for an iced tea to go when she brought my check and she just went and sat down behind the bar for a long time chatting with the bar tender before finally going to the kitchen to get an iced tea to bring me.On top of that there were flies in the restaurant (multiple) and there was a hair in my food.Nothing about either the food or the experience had any redeeming qualities that would prompt me to eat here again.

Amazing customer service and experience with our server Lupe. She is our favorite! If you come here you can expect sincere conversation, great food & strong drinks in a cool atmosphere. My partner recommends the birria tacos and I love the flautas. Good rice and beans here too--I've noticed that most Boulder Mexican restaurants use black beans--but they have the good refried beans here if you need a break from the black beans.

This is the second most disappointing experience I've had at a restaurant since moving to Boulder. I strayed from my usual Mexican restaurant, and I've never been more full of regrets. Now, while I don't expect perfection when ordering takeout, I definitely expect quality and value. I did not get that from La Mariposa.We ordered carnitas and flautas. The carnitas (photo attached) came with no tortillas, and probably a half cup each of rice and beans. Half of the meat was dry as a bone, and the other half was super fatty. Now, personally don't mind carnitas with fat attached - it adds to the flavor. But only when the carnitas are cooked properly and the fat is rendered. Not giant, white, cold chunks of fat. Those are not delicious. It was so disappointing.The flautas were not flautas, but they were taquitos - corn tortillas instead of flour. Not what we ordered, and they were dried out and pretty tasteless. Both of those also came with toddler sized scoops of rice and beans. It was obvious that they put very little care into the food. I won't be returning, and I don't recommend La Mariposa.

While eating here, my husband just declared "this might be my favorite Mexican restaurant!" He went with the molcajete Mexicano and was in heaven. I'm the "no/low" spice person and he is all in on spices and was really pleased and had fun constructing. His only mild complaint was that it only came with 3 tortillas, but I'm sure he could have asked for more. Half of the meal went home as leftovers. I enjoyed the three street tacos, in particular the al pastor and birria (the carne asada wasn't spiced enough for me, surprisingly). Margaritas were delicious (top shelf and millionaire). We also tried the basket of sopapillas and I would recommend those too. They were more dense than what I am used to and not the typical triangle-make-a-pocket-for-the-honey type, but definitely tasty with the caramel/honey dip. Service staff was really attentive, but I'm surprised it was not as busy as I would have expected on a Friday night. As someone who searches out places that aren't overly loud, this place was fantastic as it was easy to have a conversation without shouting, yay!!!They look to have an upstairs area that would probably be good for a large gathering (ie a birthday or graduation party for a few dozen people?). The parking lot was a bit tight/busy but there's an underground parking garage that probably had plenty of space. I was worried with some of the negative reviews, but think I definitely picked a winner with this restaurant. We will definitely be back again and recommending to friends and family.
