K Rico To Go

So a caveat, it's my understanding from cross-referencing Google Reviews, that the former K Rico is now going by Machetes Gourmet. The (same/similar?) truck is in this location. So if you're scratching your head on whether you can get birria at 47th and Paris, the answer is yes! I don't see a Yelp page for Machetes Gourmet, so just wanted to clarify that and also give a shout-out to what are the best tacos I've had yet in this town. I was seeking out birria specifically, and to justify my order of consommé I got three birria tacos. I figured I could handle a fourth and tried the shrimp/camaron. Wow. That taco alone was worth the drive. The pico/salsas were colorful, flavorful and complemented the perfectly cooked shrimp. All tacos were on expertly griddled tortillas. And the flavors of the birria and consommé were everything I hoped for. Would love to try the machetes next time.

We were searching for a birria taco because, trends and alas we thought we were SOL but then this gem appeared on the Yelp and we decided to go find it.Finding food trucks are a bit of a drivers treasure hunt. This one on this balmy classic chilly in the shade and warm in the sun Denver fall was parked on Paris street ahead of the DMV and police station. If this is a deterrent don't let it be. There was nary a police officer around as we awaited the prep of this food.We got a machete (long quesadilla basically) and a couple birria tacos. Unfortunately we didn't order the consomé that you usually dip it in but we ended up having the tacos regardless and they were definitely flavorful and worth all the hype. I want to go back to get the consomé next time. They do have it available we just didn't order it properly. Beginners problems. The three items ended up costing almost $20 but could definitely feed two people well. Those machetes are huge and come in twos.

Very friendly staff at this taco truck. The quesobírria tacos were very tasty--I ordered 3 but ended up getting a 4th because they're very good but not too heavy. Definitely worth having to go a little off the beaten path

Awesome street taco truck with a twist. They have street tacos with shrimp, beef, and chicken - 3 for $9. Also have hamburgers which looked legit. Everything made fresh to order.I ordered the Green Chili Cheese Fries with Carne Asada for $7- awesome! What I liked is they used a tasty marinated skirt steak that was very tender with a grilled yumminess. The green chili was a flavorful smokey saucey goodness when poured over the cheese made a gooey molten lava that flowed between the fries.

These were probably the best tacos I have had in denver! I had been waiting at the DMV off Peoria for almost 2 hours and had decided to leave and come back tomorrow. I stopped at this truck to grab some birria tacos, when I got the text that it was my turn. The owner was super sweet when I told asked if I could run to the DMV to get my liscence plates. When I returned about 10 minutes later my tacos and consommé were almost ready. I brought them home and holy cow!! Everything was so delicious, the tortillas were especially yummy. I'm not sure if they were cooked to order but they tasted so good! Everything was on point

Most taco places you go to are pretty much the same, not this place. Is very unique. The food is amazing. Sometimes you'll have to wait for an hour but is worth it .

One of the BEST FOOD TRUCKS in town,... everything is delicious highly recommended if you looking for an authentic Mexican food here is the spot you need to come... 5 star food truck everything homemade style high quality ingredients super delicious... machetes are bomb.com well all the in menú is amazing beyond amazing...COME CHECK IT OUT !!!

This place was parked outside of the DMV office. I'm a little hesitant of food trucks because I'm not sure how clean They'll be. They had a large bottle of hand sanitizer at the counter, that was a plus. I watched them prepare the food. Everything was clean inside and they used gloves. The use fresh homemade tortillas which you can see them prepare right in front of you. Everything I had was fresh and delicious. Even the hot sauce have a nice flavor to it, but I will still pretty hot. I paid 12 dollars for food and drink and was very satisfied.

Tacos look just like the pictures they were amazing! Customer service was great, very clean!
