Ito Sushi Asian Bistro

This is the best sushi & Chinese I have had in castle rock and on par with the yummy spots in Denver. You have to try!! Everything we tried was delicious and fresh tasting! Rolls were well made and had lots of fish especially on the higher priced ones. The sushi tasted very fresh. It seems they use quality ingredients as the sauce to the Mongolian beef was very flavorful and clean tasting. It had a lot of beef in bite size pieces and plenty of veg. (Some restaurants don't seem to care and throw in just a few large chunks and call it good) The service was kind and attentive. It was my daughter's birthday and she had a crown that said so and staff stopped to wish her well and they even made up a little treat for her on the house as they don't have anything for birthdays yet. The ambience was great- they have a nice fairly large fish tank that you can sit by if you have littles to help them be occupied or just want to for yourself because it's cool. They also have a nice mural painted on the wall and plenty of booths looking out the window.So excited for this spot and can't wait to go back!

During my recent visit to Ito Sushi Asian Bistro located in Castle Rock, I had a delightful culinary experience that I can't wait to share!I began my meal with a cold appetizer called "Nacho," which featured a beautiful combination of white fish, tuna, salmon, mango, and tobiko, all perfectly served with wonton chips and drizzled with a sweet sauce and wasabi sauce. This dish was so delicious that I was already feeling quite full before my main dishes arrived!For my main course, I ordered eel along with a sushi roll, both of which were fantastic. I can definitely say that the flavors were spot-on, and I appreciated the freshness of the fish.The service was another highlight of my visit. My server, Abby, was incredibly nice and engaging. She took the time to make conversation and was very helpful in guiding me through the menu. Her warm demeanor added to the overall pleasant atmosphere of the restaurant.Speaking of atmosphere, the interior of Ito Sushi Asian Bistro boasts beautiful lighting and great decor, creating a welcoming environment that enhances the dining experience.Next time I'm in the Castle Rock area, I am looking forward to returning to this wonderful restaurant, and I'm particularly excited to try the Hamachi Kama from the appetizer menu.Overall, I highly recommend this restaurant for anyone looking for delicious sushi and a great dining atmosphere!

We accidentally found this place. The staff was very friendly, extremely helpful. I can imagine though parking might be problematic at times unfortunately.The restaurant was lit up bright and very clean. Each dish was prepared with love. The Toro was delivered to our table under a dome of smoke. The Sashimi Ceviche was out of this world.If you like Naruto rolls, they actually have a couple - one being the Denver Bomb Roll. The Never Try Never Roll should be tried as well.The menu is separated by each type of fish, and "fried" special rolls, special rolls. Take your time to read it - otherwise you might miss something.

If your look g for variation of Asian cuisine with good quality, look no further than ito! They just opened a restaurant in castle rock and boy was it crowded in a Saturday night! We got lucky as we got one of the last tables for 4. There was a line by the door with plenty of families waiting! The restaurant is big inside and has plenty of seating. They have beautiful Chinese art o their wall with a ton of decoration. There is a bar as well we got our food pretty quick from ordering and the fish is fresh! We enjoyed the drunken noodles and my kids loved their lo mein, dumplings and California roll!!! Goood place to eat that's close to home!! People and service is very good!!

Ito! I'm usually wary when a restaurant serves multiple Asian food such as Ito - Chinese, Japanese, Thai. Usually taste suffers somewhere but Ito has done it well. Sashimi and sushi are very fresh. Panang curry is rich & flavorful. Tempura is super light and crispy - sauce for the tempura is not authentic but I'll overlook that. Rolls are delicious. Waitress Hyein is darling and very attentive. Nice to see CR have a super quality Asian restaurant!

The food is great. The service is great. We have been 3 times and have asked about the loyalty program we signed up for on their website. Each time, we've been told it's invalid. Minus stars for that. I hope they figure it out and retain loyal customers.

Ordered on Grubhub. Wasn't great. There was a bone in my salmon nigiri, the sauce that came with my yellowtail & jalapeño tasted fake. I wasn't impressed with the quality.

We had Tonkatsu ramen and sushi rolls for lunch. Everything was delicious and the staff were all so kind and friendly. I can't wait to go back and try more dishes in this cute little place. Even as we were leaving, another couple commented on how great their experience was. We all left in a great mood. I'm so happy we found a new local restaurant for ramen and sushi!

Stephanie was amazing! She made playful jokes, extremely personable and made our date night very memorable. She was very attentive and didn't seem to be in a rush at all. Thank you, Stephanie! We will ask for you next time we're in (:
