Located next to its sister restaurant Gemini on Pearl St., High Country has a creative and fun menu with a little something for everyone. I'll definitely be back next time I find myself in Boulder! What I tried: Half Fried Chicken - cherry cola reduction, mac and cheese Bourbon Poached Pears - whipped goat cheese, endive, sourdough Summit Spritz - caprock gin, aperol, lemon, cucumber, peychaud's bitters, sparkling wine Down River - boulder spirits new american whiskey, nardini amaro, chocolate & aromatic bitters, orange, cherry Best bite:The fried chicken was crispy AF (because that's the only way it should be), perfectly seasoned, and super juicy. The mac and cheese was also a standout: cheesy, cooked just right, and the perfect sidekick to the chicken.The bourbon poached pears were my most unexpected bite. I had never tried them before, but my waitress recommended them, and wow...delicious. They paired perfectly with the goat cheese. I ate my leftovers from breakfast as they were that good! Fine...I ate them as a late night snack that night...okay fine, I had a few bites in the car. If you haven't been yet, check them out!

Edit: The hostess has since reached out and apologized for the error in communication. We appreciate the prompt response and will believe that they sincerely did not mean to exclude us. We understand mishaps happen and it's not easy to run a restaurant. We wish this restaurant the best. We were disappointed with the service during our visit. As visitors to Boulder, we were excited to try this restaurant after seeing a positive TikTok review. My husband, our 3-year-old, and I arrived and saw two parties ahead of us get seated quickly, so we assumed the wait wouldn't be long. We stood right by the counter, and another party entered after us. When the hostess returned, she looked past us and asked the party behind us if they had been helped. They pointed out that we were there first.The hostess then informed us that the only available seating for a party of three was at the bar, which wasn't an option for our child. When we asked about table seating, she said the wait would be 15-20 minutes. We agreed to wait and stepped outside. However, after an hour, we never received a text.Standing outside in the cold with a young child was tough, and it became clear that we weren't going to be accommodated. If the restaurant does not welcome young children, it would have been helpful for them to communicate that upfront. The experience left us feeling unwelcome, and unfortunately, we won't be returning.

Randomly stumbled across this place, and it seemed really nice. The inside was clean and had a good atmosphere. I shared the Vaquero flank steak with my friend, and it was nicely seasoned and cooked just how I liked it. One thing I really appreciated was that when we told the server we were sharing, they split the dish in half and plated both portions separately. It was so refreshing to see, and both plates were beautifully presented. We did not have to split it ourselves! Very attentive and considerate service.

One of those places I must have passed by so many times and never went in, and I'm glad I finally did! The food was really good. as anyone that reads my reviews should know, I like traditional foods with a little twist and this place has got the twists. For example, their grilled cheese sandwich is actually a grilled Brie sandwich, and eve that has an extra twist. The fried butternut squash sandwich is also a great option. The service was excellent and the prices were reasonable for today's crazy reality. It is a very casual space but still looks sleek and elegant, and very clean.

Overall really tasty food. The ambience was a bit experimental and fresh, but the service was a bit odd with some weird interactions. The cauliflower lemon pepper was actually really good. It had a solid level of crispiness and seasoned really well. The sauce wasn't the best but added some wetness to it. The chicken breast was really crispy outside as well with a really moist interior. Which was impressive to me since it was a pretty thick chicken breast so I typically expect it to be dry with that kind of crust. It came with squash and a tasty pumpkin sauce too. Overall a really tasty meal but an intriguing interior

It's a new concept owned by the restaurant next door & they have a few menu kinks to work out. We started with the hippy dip which was good, but served under lettuce so it gets all stuck to one side of the lettuce. The Fresno chili buffalo wings were pretty good & the right spice level - more of a thick paste than a sauced. The chicken sandwich was too much bread and not enough chicken and toppings - was expecting a chicken breast instead of some shavings. Kathy's salad needed more greens and fewer dates - would also prefer more citrus in the vinaigrette. Although the Bonanza brisket was covered in pickles, it was definitely the favorite. A good combo of tender meat, fried onion, and bbq sauce on Texas toast made a tasty combo. Would recommend the fries over the rings to accompany it.

High Country comes from the same owners of Gemini (which is right next door). Service from Coco was so friendly and great. We enjoyed the super cheesy queso Fundido and the wings. The wings are brined, making them super flavorful and fall off the bone. We got 2 sauces to try. Fresno chili buffalo (spicier) and honey habanero (sweeter). Both were great. We also got the mile high burger with fries and the chicken sandwich with onion rings. I like that they don't upcharge for salad or onion rings. The fries were really good too. (I am very particular on my fries) For cocktails I had to try the Down River. It was so good. Served properly up in a Nick and Nora glass. My hubby got the XXX. It was delish! Very refreshing. We finished with the lemon bar which was light and great. Can't recommend High Country enough. They have a great patio and I am excited to see them grow in the space.

I've been coming here since they opened and haven't had a bad thing on the menu yet, but they're currently running a special on pep rally days. The Stampede Burger: Smash burger, smoked brisket, fried pickles, jalapeños, and bbq sauce. It was absofriggioutely one of the best burgers I've had in my life. Adding that on top of the fantastic, friendly service and the modern but eclectic vibe and you'd be hard pressed to find a better dinner spot in Boulder.

10000/10 recommend! I feel like I have severely overlooked this place- the atmosphere is very cozy and the food is next level. You can tell that they put love in every dish. We started with the cheese fries and then had the chicken sandwich and pork chop for dinner- you can tell the ingredients are so fresh and every bite was the best bite ever. Cannot recommend this place enough, seriously.. go try it!!
