We had a really nice experience at Guadalajara! The service was exceptional--our server was friendly, attentive, and made sure we had everything we needed throughout our meal. The restaurant itself was charming, with traditional Mexican decor that gave it an authentic feel. It was also very clean, and we appreciated the abundance of windows that let in plenty of natural light.The chips and salsa were fantastic--crispy, fresh chips paired with a perfectly spicy salsa that got us excited for the rest of the meal. For the main course, the albondigas stood out as a real highlight--rich, flavorful, and perfectly cooked.We also tried The 23 combination plate, which had some hits and misses. The enchilada was great--flavorful and well-seasoned. The chile relleno was decent, but the sauce had an odd taste that didn't quite complement the dish. Unfortunately, the tamal didn't work for us--it had too much masa, was crumbly, and had an unusual flavor that didn't quite hit the mark. On the positive side, the beans and rice were delicious--fluffy and well-seasoned. The crispy chile relleno was okay, but nothing to write home about. The carnitas taco, however, was very good--tender, juicy, and full of flavor.Overall, the meal had some really great moments, but there were a few items that didn't quite live up to expectations. That said, we'll definitely be back to try more of their dishes and revisit the things we really enjoyed.

Excellent service quick greeting, quick refills of chips and water and friendly. Standard Mexican style restaurant theme. For the food I got a beef chimichanga with queso covered 8/10 for a chimichanga fried right crisp and loaded. Beans 7/10 rice 7/10. Salsa good 6/10 but spicy all in all it was an excellent for a Mexican restaurant in Colorado and the best I've had in the Castle rock area.

Went here for a friend's birthday, they picked it so off we went. We had reservations but really didn't need them on a Tuesday night, even with 5 of us. We were greeted & seated immediately, while waiting for the other 3 in our party to show. Great, warm, fresh chips & homemade salsa was first up & they were delivered to us right away. The salsa was mild, but ask for the really spicy stuff personally.Service was great! Didn't catch the waiter's name, but he really knew how to work with guests. The restaurant itself was big & very clean. Custom chairs with beautiful scenes painted on them were at the tables, as well as comfy booths.Food was ok, it was standard Mexican cuisine. The dishes had refried beans, Mexican slaw & rice on most of them. The plates were very hot. Dessert of Sopapias & fried ice cream were very good!If you're looking for a Mexican place & in Castle Rock, give Guadalajara a try.

I guarantee there is something for everyone here. I'll definitely be going back to try some more and to check off the more of their margaritas. I am sad to say that this might be the worst Mexican food I've had. My husband ordered the chile relleno, tamale and enchilada combo. The relleno cheese was hard, not even melted. The waiter said that's just how it comes. Everything was dry and hard and disgusting. The worst part is that it's expensive. The 3 taquitos were $18. Luckily we had a coupon and is why we tried it.

If I could give zero stars I would. Horrible just ate there. Food was very bad and burned. Service disrespectful. The owner-our sever yelled at me saying the 6lb tiny service dog had to be on the floor, both my arms were tangled in my jacket and I was trying to get free to put the dog on the floor. I told him I will put her on the floor as I was trying to untangle my arms. He continued to berate me and all the customers were watching him embarrass us while trying to get loose. Told me the service dog had to be on the floor. Wrong a service dog for diabetics and cardiac need to be on the chest to smell when there is a medical emergency. I had the harness to keep her on my chest to do her trained and certified job. He denied me and her our federal rights. I do not recommend this place at all!
