Deviation Distilling

Deviation distilling took gin cocktails, gin and tonic and any gin drink you can think of and elevated it 5260 feet above sea level. Ugh that was an awful joke but to add insult to injury, let me explain my bad joke. Before coming here, Colorado gins in general came highly recommended for a variety of reasons - mountain water, botanicals and someone might have even said the altitude makes lighter liquor like gin just taste better to us sea level peasants. While I haven't vetted this theory, I can confirm that the gin is far superior than anything I have had in my life. The tanqueray's, Bombay sapphires and bulldogs of the world can please take a seat. Deviation distilling was surprisingly empty when we walked in on a Tuesday evening. The gin and tonic was delicious and gorgeous. It was like spring in a glass, with accoutrements such as orange slices and flora and fauna. Their gin flight I highly recommend if you are looking for a tasting of all their offerings. Also get their three pack gin bottle gift pack as a gift to yourself or for someone back home. All in all, if I lived here, you will find me here a lot!

A beautiful distillery serving up our favorite cocktails during our Denver trip!I love a gin cocktail, and was excited to see so many of them on the menu! Staff was friendly and helped us make a decision on what to order too.This distillery was a little tricky to find as we walked around the area, but definitely worth it!

Stopped here for cocktails before our trivia night and it was the perfect night - our group of 4 sat outside on the patio furniture. It took me forever to pick from the delicious fall menu - I ended up with the Pumpkin Chai (ZinEin Bourbon, Aztec Whiskey, Chai, Cold Brew, Lemon Juice, Pumpkin Parmesan Foam, Nutmeg & Pumpkin Cookie BABY) and my husband got A BLUEBERRY'S WILDEST DREAMZin Fin Bourbon, Herbal Liqueur, Lemon Juice, Blueberry Puree, WalnutBitters, Topped with Sage Foam. Both were delicious! A little pricey for a cocktail but worth it - the foam was delicious and loved the ginger snap that came with mine. I'm not a huge whiskey drinker but have been trying to get more into it and honestly I couldn't even tell whiskey was the liquor in my drink. Will definitely go back and try other cocktails!

So since I got a knee injury, handicap accessibility has become an issue in my life. The staff was awesome in supporting accommodations to ensure I could get up the (short) stairs to the restroom (even in a wheelchair) and making sure the table was the right height. Love love love the staff! Drinks are pricey, but so good and so worth it. Our first drinks were the painkiller and the Singapore sling, both of which were delicious but I liked the painkiller more. Our next round was the chai old fashioned and the blood orange flip. Both were SO good, probably our favorite round. The chai old fashion was very whiskey forward, with cardamom and cinnamon on the backend. The flip was a little more chill, but still tasty. Highly highly recommend and will absolutely be back next time we are on the dairy block.

We came to Deviation for the first time and it won't be out last! We started with the gin flight. It was really fun to try all the different flavors of gin and figure out what we liked. The mixed drinks were fabulous. Very fresh ingredients.

Deviation is excellent! I love this spot for some crafty distillery drinks! They have nice sets, too, that are great for gifting!The menu is very unique, which I really appreciate. Like a bacon churro old fashioned, mango lassi, and sesame -- you don't see stuff like that normally! The herbaceous gin was my first bottle purchase there and I'm not even typically a gin gal!!! It was THAT good. I am, however, a herbaceous drink lover. They are good with giving small samples, which is really nice to just let customers try and enjoy and have a reason to remember the place because they had such a good time. We have so many options, just let bartenders serve their customers without stupid rules and so I love that about this place. You have to find them in the alley, so it's tricky, but worth it! When you're on Blake, you turn right after Foraged restaurant and go down the alley until you find it! The space is nice inside/outside with some spots in both areas and and upper level inside, as well. The first time I heard of Deviation was for a Yelp event! So, I'd say that event should have paid off for them! And they sold lots of bottles that night, as well. Why haven't they had another event?!?! Please let me in again, Matt, if/when that happens!!!Top notch spot - 100.

I do not drink gin but I started drinking gin here! The cocktails are works of art. They are beautifully presented and delicious! I loved that you are able to enjoy the outdoor seating in the Diary Block "alley". Great for people watching! The service was ok. The bartenders were the ones really doing the work! I recommend this place for a quick drink or to spend an evening sitting on the comfy couches to watch the world go by. I was impressed. Don't miss this!

Have been to Deviation a few times and I always have a good experience. The bartenders are always super friendly and their gins are so good. The vibe is always funIt is convenience because you can order your food from the dairy market which is nice. I have a couple of bottles of their gin at home too. Their chai old fashioned was so good!

The space is clean and simple. They have a good selection of cocktails that utilize their gin, bourbon, and whisky. The two drinks that we ordered were very tasty and refreshing! Service was good and is what is typically expected. Overall, a good spot for quality cocktails if in the area.

We stumbled onto this place when we had a free afternoon in town, and boy oh boy were we happy when we did! It was super fun to sit outside in the alley and try some drinks. Of course, we went with the gin flight and also with a popcorn flight (a perfect pairing, perhaps?). The staff were super friendly and welcoming, and the alcohol was delicious! Will definitely stop by the next time we are in town.
