Chile con Quesadilla

At NDK here at Gaylord of the Rockies, not much for food options unless you want to pay an arm and a leg. That being said this being food truck, I still had to pay with a leg and half an arm for simple food to go, $17 an item. Simple service and not much else besides a snack.Food choices were chicken, pork or veggie. Bowl, tacos or quesadilla. We opted for a chicken bowl and pork tacos. Chicken bowl was small, basic, and topped with geen Chile's not really a a green chile. Food had an interesting citrus profile topped with cabbage, not a slaw. The pork tacos were a better of the two, being full of flavor and moist but drenching the single corn tortilla it was served in. By the end of the first taco, the other two were falling apart. Tacos were topped with cabbage again but all together, a very small portion filling for the tortilla being used. Overall food was edible. Not a coleslaw like labeled. Green chile was in fact just diced up green chile almost canned like. Small portions for the amount of paid. Would eat if I was hungry enough.

While working at this building in the Denver Tech Center, we had a pleasant surprise with this food truck. Both Dillon and Parker were working and provided stellar service. The food was amazing and fresh with a wonderful sauce. We were so happy to have received such great customer service. Thanks for everything guys.

We had the birria quesadilla and the triple B nachos. Both were amazing and full of flavor. Nice large parking lot with plenty of spaces. Good ambiance with some games for the kids to play.

I really enjoyed these quesadillas. This truck came by our apt to give us a break from cooking at home! Such a nice break and made it extra delicious! I got the vegetarian and my boyfriend got the Cubano. I also got the sassy sauce/chips and the corn.Def recommend the corn! Elote taste with parm. So good! They are large too! Which is nice and I put my leftovers in the oven and still good after reheat! I would eat this again if i saw this food truck!

A food truck at a baby shower? Genius. We ate our food so fast, we forgot to take a picture! Classic and creative options. The jalapeño-poppa-dilla was my favorite! I'd head to any brewery for some beers if these guys were parked outside!

This place is amazing! The quesadillas were the best I've had and the green chili tastes fantastic!

Excellent food! Have had several menu items and they are all amazing! Service top notch! Beautiful new brick and mortar!

Terrible idea. First time going and this will be our last. quesadilla was soggy. Nachos were soggy. Beans tasted like they were from a can. Very salty, rice had too much butter. Did I mention that it was way over priced. Sorry for the bad review but. Have to do better. Especially when it comes to Mexican food in a predominantly Latin area.

Horrible taste dedicated to selling fries, hamburgers or beer, Mexican food is another level you do not know that errs very very slow, you necessitates Latin cooks in your kitchen they if they know how to work fast.

A little pricey for downtown Brighton but food is awesome. Nice atmosphere - cool mini bowling area
