Chile Con Quesadilla - Brighton

The food is so fresh and delicious. Prices are comparable. Staff is very friendly. It's a good place to come and hang out and watch some of the games and they have a great bar.

There's definitely a reason why this food truck-turned restaurant is the most awarded in Colorado! The food is amazing! The Birria items are what pulled us in but we also had the chicken nachos and Mac Daddy quesadilla. Because of the carnitas and green chile inside the quesadilla, it was the juiciest I've ever had in the best way possible! I'll be dreaming about that one for a while! The owner took our order and served us, he was super friendly! Oh and the building itself is very cool and up to date and they also have a 2 lane mini bowling alley inside!

Pleasantly surprised! Staff were extremely nice, welcoming and helped answer questions. Restaurant itself is really cute, nicely decorated and has some fun extras like a mini bowling alley. The food was really good! Flavorful, not too spicy and good variety. There is 100 Mexican food restaurants in Brighton and this one stands out. Try it! You won't be disappointed!!

Start by saying the owners are amazing people! Great service is one of the hardest things to come by these days. This is family owned, community driven & they really make it feel like home here. The atmosphere & ambiance is cool, they even have a mini-bowling alley there!!!But what takes the cake, the food! The food is 100/10...no joke. Authentic Mexican Birria & the Banana Pudding is no joke. If you're on a diet, forget about your diet! Get here, NOW!!!

I was excited to try this food truck turned restaurant that recently opened in a familiar space. Inside, you'll find the mini-bowling alley and super cute pink decor that matches their trucks and Day of the Dead themed art. The large seating area is clean, and the ordering area is modern, with large menu screens. The food is formatted so that you select your protein variation and then a presentation, which could be a quesadilla, nachos, taco, sandwich, or bowl. If you really want more, you can select a side dish. We decided to try pork nachos and a birria quesadilla.The service was top-notch, and the staff was super friendly. Unfortunately, it was a big letdown. $15 nachos had very little pork but lots of convenience store nacho cheese sauce, which was not at all what I expected. They also were missing a mess of normal nacho toppings, and those that were on it were scarce. More than half the chips were dry. The quesadilla was unremarkable. The cheese used was not high quality, and it seemed average at best.Overall, I am disappointed as I would have loved to have found another option in Brighton. With the fun atmosphere and lots of TV, it would have been a good place to grab a bite, a beer, and watch the game or meet with friends. Hopefully, they get it dialed in or lower their prices to reflect the actual product.

Best place around. No messen around here, this place is an absolute must The food is unique and so full of amazing flavors. The customer service is excellent and the atmosphere is so enjoyable.

I ate there today and it was delicious. You have got to try it. The service I had was unbelievable. The girl that took care of me was freaking awesome. You can be sure that I will be back.

Oh my Gosh....food was amazing, the staff friendly and attentive. Margaritas were yummy. I had the Birria Wontons, what a wonderful delight they were. The Birria Tacos as well. Definitely will be back. Come on Brighton, you need to visit or even a pick up order. Let's get them back to have Taco Tuesdays again! The atmosphere is pleasant.

Their Birria tacos and wontons are AMAZING! A must try! The atmosphere and staff are so welcoming. Our new favorite spot in town!
