This place is the definition of 4 stars. It's good, not great. Service was nice. The food was decent.The interesting thing is, we live 1 mile from this place and still drive to Boulder to go to the Rio or Efrain's.Casa Alegra was better.

I was anxious to try this new place, as I'd been disappointed that Casa Alegra had shut down (we miss you, Marina and Gustavo!). I liked the ambiance and how they re-designed the lower level, but also kept the upstairs similar to the old restaurant (the gorgeous bar, the big windows looking out onto the train tracks and downtown Louisville, etc.). They also upgraded the outdoor patio, which is a beautiful place to dine on a summer night.The food was delicious and was a bit different than the usual Mexican fare, although there were plenty of familiar dishes, too. For example, the fajita veggies had summer squash--hadn't ever run into that before but loved it. The portions were more than ample and I ended up taking much of it home with me. They were very willing to accommodate my medically-driven dietary restrictions (one being low- to no-sodium, which is very difficult in a Mexican restaurant). Victor was our waiter ... friendly, efficient and knowledgeable. He went above and beyond to talk to the staff in the kitchen and get my questions answered so that the meal I ended up with was perfect. He was also open and very patient with me as I described what I could and couldn't have and then gave me his suggestions for the best choices for me. I realize I'm a high-maintenance diner given my restrictions, so it makes me doubly grateful when I find staff that is both accommodating and friendly. Five stars for Victor!This is a new go-to place for us and I'm looking forward to our next visit.

This place has fancy decor and good everyday food. I've had two dishes here. The Chile Verde Burrito (green chile pork) is delicious and very similar to the Casa Alegre Burrito, which was my favorite dish at the Casa Alegre restaurant that used to be at this location. The Cochinita Pibil (slow roasted barbecue pork) is also good; the pork is extremely tender, although somewhat fatty. I have mixed feelings about the barbecue sauce, which is not bad but is bland; the dish might be better with pork and no sauce. My wife has had the Pollo a la Crema and the chicken Fajita Burrito and liked both of them. We both think the Queso is very tasty.Some of the dishes come on huge platters filled with probably more food than you need at a meal; the Pibil and Pollo a la Crema were this way.Service is very attentive. Prices are reasonable but a little higher than other Mexican restaurants, maybe 15% or 20% higher.Pro tip: seating is cramped in the front room but much more spacious in the back room ("Skull Room"); however the kitchen noise is much louder in the back room. There's also a spacious patio in back of the building that looks good but that I haven't tried.

3 1/2 stars.They did a nice job at renovating what used to be Casa Alegre, especially inside. The atmosphere is now more upscale and contemporary, and the patio is very pleasant.I appreciate that the menu offers a wide variety of traditional Mexican cuisine, nothing fancy, which is not a bad thing. I recently went for dinner with a few friends during the week. We were all happy with our food, less so with the drinks, and definitely surprised at the poor service. To be fair, it might just be that our waiter needs serious training.As for the margaritas, a few of my friends had warned me about Azul Fuego's overly sweet and and weak cocktails. I ordered the skinny margarita, asking for it not to be too sweet, and it came back perfect for me. I tasted the house one, and it was indeed very, very sweet. Some may like it that way but I don't.We sampled a variety of the dishes, and it's great that there are plenty of options for vegetarians; after all, we are in Boulder county. One of my friends loved the garden quesadilla, and another enjoyed the pozole. The only disappointment was the cheeseburger, which looked a bit wimpy, the piece of meat sandwiched in a sad little bun. We never got to try the salsa because our waiter either forgot or planned to bring it after the entrees. We just asked him to delete the order.Speaking of service, it took a very, very long time to get our drinks, and even longer for the food. Except for one of us who received her stew maybe 15 minutes before the rest of the table. While I understand it's much quicker to ladle soup, it doesn't mean the entire group can't be served at the same time.I will certainly go back since Fuego Azul is very convenient to my house, but I really hope both the service and drinks improve.

We just tried Azul Fuego and right off the bat the house salsa was embarrassing for the chef/kitchen and please note the chips and salsa aren't free.Obviously every chefs interpretation of salsa is going to be different than the next chefs but... this was like someone strained the salsa got rid of most of the solids and viola salas is served.The steak and chicken fajitas were marinated well with worcestershire sauce the fajita vegetables were haphazardly grilled making some well cooked and some not well cooked.The rice and beans are standard.The overall feel and ambiance were great the server was attentive to the needs of the table but we came for the food and like i said right off the bat the salsa was horrible.

We were pleasantly surprised by this new restaurant. Being vegetarians, our options are often limited because many sauces, rice and beans contain animal products. Azul Fuego has numerous options for vegetarians. ALL beans are veg, so I was able to have pintos which are usually off limits. They have red AND green sauce which are veg...I really enjoyed the cheese/onion enchiladas with red sauce, and my husband enjoyed his chili rellenos with the green.The rice was nice and light. We were in the front room on a cold gray day so it was a bit gloomy with all the windows, but it was warm enough. We looked in the back on our way out and it was cozier.Server was very friendly, knowledgeable, and competent. We will definitely be back.

We were a large group, but needless to say the service for some of us was less than fair. The food, which we ordered at the beginning, never arrived for 2 of us and when we inquired the hostess mentioned we would not be required to pay for our meal. I had soup, really 45 minutes for soup...anyway the soup was cold and not good. When we were leaving we asked the hostess a few times, since we never received a check, if we were ok to leave as we had tickets to an event that was starting. The hostess told as we were ok and we left.later that evening we were informed by someone else in our group that they had to pay for our meals. Not only was this embarrassing, but not what we believed. My friend contacted the restaurant and they would not give our friend a credit. Very poor customer service with very poor quality of service and very poor quality of food. Would not recommend.
