4/27/24 - Shoyu Tonkotsu Ramen. Chashu. Tons of flame-grilled charred flavor. Good teriyaki marinade. A little chewy. Uneven fat.

Ordered takeout: - They do a good job of dividing out components of a meal: like the curry sauce apart from the croquettes. Veggie Croquette Curry (mild spice)- This was a bit hotter than a usual mild. It's a classic Japanese curry, and does taste great with the veggie croquettes. The croquettes was mostly a uniform texture inside with some peas and carrots. It had a nice crunchy outer panko layer. If you're craving Japanese style curry, I think this hits the spot. 4/5 (Side note- I keep trying them but always realize after I'd still prefer Thai or Indian curries. This is still classic, no points docked for that.) Veggie yakisoba- Classic, with carrots and broccoli, on the sweeter side. It's a great dish to eat on the go as well.

I have had a bookmark on this place for 7 years. Finally had the chance to come and try the kimchi creamy udon. It was soooo worth it! I rarely order such a high carb meal but I read so much about it, I had to try. It is a big portion, so I packed half of it right away to take home. So saucy/creamy and flavorful. Very satisfying. Has pieces of broccoli and kimchi...nom nom nom! My daughter ordered ramen with chicken and she said it's the best she has ever had. Chicken had a nice grilled charred taste. Very friendly service. They also have a self serve water and hot tea station. I will definitely be back to try more dishes.

Love Ashiya! A must every time I'm in town. Came two days in a row for lunch while I was here. Got curry chicken katsu the first day which I never had before. Wow so crispy and delicious. The curry was on point too! Second day got kimchi creamy udon with added chicken teriyaki. Again it did not disappoint and Ashiya always delivers!! The creamy udon paired so well with the kimchi and kinda offset the richness. The cashier who helped us was very friendly and welcoming as well. Ashiya has my heart and I wish I lived closer! Loved seeing a small shop doing so well too. Strongly recommend this place and please continue to support!

This place is going to be my new favorite! Casual and easy to find parking. Everything that we ordered was super flavorful and hot. The katsu curry is huge and it's so tasty. The spicy pork is tender I just wish there is more rice to go with it. As a curry place the ramen and udon are even better than a lot of other ramen places. The owner is very friendly and the service was really fast.

There is a variety of food! They have ramen, creamy noodles, rice plates with curry and different katsu! The food was decent and they gave a lot portion wise. The service was great! They set up the chairs and table for us. Pretty simple place, order food. They bring it out and you leave the dirty dishes on the table.

We stopped by here for a quick dinner. We ordered the Shrimp Tempura Udon and Beef Udon with Takoyaki. They were both decent broths but less bone broth more like a mushroom broth. We usually prefer bone broth. I personally loved the beef in the udon, they were super tender. We also got the takoyaki which was good. It was after we ordered that I realized we should have ordered the dry kimchi udon, there was a couple who had it next to us and it looked amazing. If we come back, I'd definitely order the dry udon. Staff were friendly and they also had a free hot tea station. It's in a plaza where parking wasn't too difficult but the spots were a little tight.

Best Japanese food in all of the Seattle area. Not only is this some real authentic Japanese cuisine but the fusion foods do like the Kim chi Odon noodles is NEXT LEVEL flavor and texture. Any of their fried chicken is incredible. Just a gem of a place. Make sure you give it a try at least once. A must go to for a foodie.

I love this place soooo much. The katsu is extra crispy. I got the katsu curry plate and it came with a large chicken cutlet in curry, a nice bed of rice, and fresh green salad. I got the salad on the side because I don't like my cold lettuce touching hot food. The dressing is amazing. It's almost like a miso sesame dressing with fresh romaine. We also got the honey chicken karrage. It was fresh, sweet, and crispy. So flavorful and delicious. Next stop here I want to try the creamy kimchi udon. The service is awesome too and food came out fairly quickly. They have fresh hot tea and water available for guests.

Delicious hole in the wall experience!Food was amazing! We got the chicken katsu and katsu curry. Both are making us want to return to this spot. The curry is a more savory curry, instead of sweet. The katsu sauce is reminiscent of Hawaii's katsu sauces, which is perfect! The service was excellent and everyone was very friendly. I even have to shout out the bathroom as it was the cleanest, most well kept restroom I've seen in a small mom and pop restaurant.

TLDR: Skip the ramen. The curry is probably better.Saturday 4/27/24 ~2:00 pm, seating available, 5 min 42 sec order-to-bowl$18.79 before tip~~~~~~~~~ Shoyu Tonkotsu Ramen~~~~~~~~~Final Score: 5.09/10(5.2/10) Noodles: Average thickness (and generally average) egg noodles. These noodles were cooked well, and maintained whatever bite / texture they were meant to have. Definitely prepackaged with no particularly assertive flavor. These were higher end than your standard grocery-store-tier noodles, maybe the same level as the frozen section in a Japanese market. Nothing wrong with them. Average.(6.4/10) Broth: Rich, creamy, "Shoyu" Tonkotsu broth. Probably the best part of the bowl. The broth was just the right milky consistency you'd expect without being too oily. There wasn't a huge pork (long bone boil) depth of flavor or aftertaste but it was still enjoyable to eat. The predominant flavor came from the grilled chashu. The flame grilled / smoky aftertaste was very present (not complaining). The Shoyu tare was minimal, you couldn't taste the distinct shoyu-umami flavor with your eyes closed. I doubt they are prepping the broth in-house, but their chosen vendor is solid enough. Pretty good.(2.5/10) Egg: An objectively weak ramen egg. Completely unseasoned. Just a soft boiled plain egg placed in the bowl. Bland - didn't add anything, and may have even been a negative aspect. The actual soft boil execution was pretty good, the yolk was jammy without much yolk curdling near the edges. It's just odd, going through the trouble of correctly soft boiling ramen eggs but not applying any seasoning or flavor to them. Bad.(6.1/10) Meat:4-5 thick pieces of flame-grilled pork. The flame grilled char markings are the most present (visually and flavor-wise) aspect of the chashu. It's not a traditional rolled chashu pork belly that falls apart tender in your mouth. More like a well seasoned pork (belly? Shoulder? loin?) grilled on a family outdoor bbq. The flavor was a strong teriyaki style sweet soy marinade. The meat itself had a good fat / meat ratio, though all the fat was concentrated on the outside edge - leaving some pieces with a huge chunk of flab. This meat would be great on a donburi. Not traditional chashu, but relatively tasty. (4.4/10) Misc Toppings: Bamboo shoots, mushrooms, bean sprouts. Standard toppings selection with no extra preparation. The long slices of what looked like Portabella mushrooms were interesting, but a bit odd in texture (and only flavored by the broth). Nothing offensive. Huge toppins volume.(4.6/10) Other: The ramen bowl is LARGE and could easily be split by two people. Execution was a bit confusing. This is mostly a curry/teriyaki/donburi shop that gives some effort to the ramen. It was never going to crack the top tier. The Udon on the menu looked more appealing / specialized to their talents. Overall, the bowl was a DNF. There is nothing "bad" about the bowl (other than the egg), but there are much better options on the menu. ~~~~~~~~~ ~~~~~~~~~ ~~~~~~~~~*Weighted Scoring Formula: Noodles (25%), Broth (25%), Egg (15%), Meat (15%), Misc Top.
