OK, getting a drivers license in Texas right now is crazy, I had to wait two months and drive out to Tolar, to get one... Next-door was this amazing barbecue place, everyone at the DPS office was talking about it and they couldn't quit raving about their patty melts. After Smelling them, while waiting in the queue, I had to go get something. I walked into Hill city chophouse. Outback, they have wood grills running and the smell was making me drool for hours. When I walked in, I didn't see Patti melt on the menu so I ended up ordering a quesadilla with pulled pork. It was damn tasty, they are very generous with the meat and the meat was succulent. I also got a side of their hatch, macaroni and cheese because I wanted to try it. I have to say the quesadilla was perfect, their green tea sauce has a little cake to it, and it was a perfect accompaniment. The hatch mac & cheese was a little light on flavor, but when you mix it in some of the tomatillos stuff it kicked butt. The only letdown I had there was the beans, they're just wasn't a depth of flavor to them, and there were so much other good food. I didn't want to waste space while sitting there eating my quesadilla. Someone came in in order to Patti and I went you can get one... The Grill master/owner came out to talk to his friend and I mentioned I wanted to try the patty melt and so he whipped me one up... It was to die. Totally worth all the hype, it was juicy and it had lots of good pepper in it. The cheese was perfectly melted, and bread was crispy and buttery and perfect. I put half my quesadillas away most of the patty melt. While sitting there I was talking to his friend and Grimm and he discussed his smoked turkey but they were out, so now I have to drive all the way back to Tolar to try the turkey cause it is totally worth it. I highly recommend taking a trip just to eat.By the way, the people there are super sweet, and couldn't be nicer. So when you're in Tolar next to Granbury, stop by and say hi.

We're always checking out new Texas BBQ places. We saw this on the Texas Monthly up and coming bbq places and decided to check it out. The brisket was thick, juicy slices that melted in your mouth. The turkey breast had great flavor with the pepper rub. The stand out for us was the waygu jalapeño sausage. Great snap and extra cheesy! It has some kick, but wasn't too hot. The sides were good but not great, but still wouldn't be surprised to see this on Texas Monthly's Top 50 next year. Would definitely make the stop again.

Huge thick slices of brisket and nice snap on the sausages. BBQ sauce was okay but sorta in between sweet and savory and I would prefer it to be one way or the other. Cole slaw was too peppery for me and I prefer sweeter potato salad. Theirs is mustard based. Three huge slabs of brisket and a full size link for a two meat plate for $20 so it's a great value for your money. Worth the drive to try it out!

When you are grown up and special days fall in the middle of the work-week, you celebrate on the weekend. The hubs and I decided to check out the hype around Hill City Chop House in Tolar, Tx for a little anniversary dinner.... (*please note it is more of a lunch place Saturday (11-5) & Sunday (10-2) and only open Thursday (4-9)- Sunday) we almost missed out as we arrived at 4:44. (Couldn't find hours of business posted on their Facebook page or anywhere else online)Review: The hubs had the ribs & jalapeño cheddar sausage with slaw and potato saladI did the brisket with hatch Mac & cheese & potato saladBoth of us had the banana pudding (hubs had 1 & 1/2 as I couldn't finish mine. )MEATSRibs: good, but a little dry (said he'd have them again) Jalapeño cheddar sausage: really good- I tried a piece of his and agree it's good. (Probably best bite of the night meat wise) Brisket: good, but a little too fatty for me, I'd give it another try as we were "late to the party" arriving just before close. So maybe that was what what was left?? The fat needed to render more and I prefer my meat hot and it was warm at best.) SIDESpotato salad: we both had this side, was good but tasted like it was missing something Hatch Mac & Cheese: was alright... probably would be better when it is fresher and hot. Slaw: hubs says it's the best slaw he's had and he's eat there just for the slaw. DESSERTBanana pudding: AMAZING! Creamy, solid flavor and rich. Portions are good, price is comparable with other BBQ places.... Not the best BBQ I've ever had, but it's good and we will be back.

Guy, y'all have to eat here!!! Personally, I rank this BBQ as some of the best I've ever had! As soon as you walk in, you're created by very friendly staff. Get in line to order your food, and you're met with the great staff. My husband and I got a three meat, two side plate to split, and we still had left overs to take home! Each meat is 1/2 pound, and the sides are huge. I cannot believe the amount of food you get for their prices!Jalepeno Cheddar sausage : Soooo good! Very juicy, the cheese oozes out with just a hint of jalepeno. Ribs: I am not a fan of ribs in general, but I would eat a whole rack of these ribs as they are so tender and fall off the bone. Turkey: Smokey and peppery, while remaining juicy. Very good flavor. Sides:Tator salad: Mustered base, and good. Nothing special, but definitely very good.Slaw: EXCELLENT!Only open Thursday-Sunday from 11a-2p. Met some family from Stephenville here, and they said they found a new spot to keep going back too. About a 20 minute drive from Stephenville and about an hour from Fort Worth. We will absolutely be back. Well done, y'all!

Me and two other buddies went in and ate for lunch. About 2 hrs later we are all calling each other because we were sitting in the toilet for the rest of the day. I'd say it wasn't a coincidence. We all ate the same place and all were feeling bad around the same time frame. I literally paid 30$ to sit on the pot all day.

My husband and I visited Hill City Chop House in the small town of Tolar. (50 miles southwest of Fort Worth). This BBQ joint is in an old gas station. The ambiance and the décor are everything that I look for in a good Texas BBQ restaurant. We ordered a three meat plate, brisket, ribs, and sausage. We also had the wonderful opportunity of talking to Dustin Martin, the pitmaster. He was very proud of his smoked turkey so he brought us a sample of that as well. The turkey definitely lived up to Dustin's recommendation. It was smokey and very moist. We ordered the lean brisket which was tender and smoked to perfection. The sausage was made in store and had a wonderful texture with the perfect amount of black pepper. The ribs had a peppery dry rub and were tender and tasty. For sides we tried the potato salad, beans, and Hatch Mac and Cheese. The potato salad had a mustard base and was very similar to my mother-in-law's potato salad. (The BEST!!) The beans were a charro style bean dish with the perfect amount of jalapeno peppers and onions. The Mac and Cheese was perfect. Most mac and cheese sides that I get at these places have mushy noodles. These noodles were a large shell pasta and had just the right firmness. For dessert we tried the Smoked Berry Dump Cake which was an excellent end to a fantastic BBQ meal. The servings were very generous. We had plenty for lunch and extra for another meal. It was also very affordable. This is a place I would go out of my way to return to.

Wow! This place is unbelievably delicious! The brisket is top notch, as well as the hatch chili Mac and cheese and elote!My spouse had the brisket nachos and they were amazing!This will be our new go-to for barbque, as there is nothing that even comes close in Granbury!You must try it!!
