The 4th Street market has a plethora of food selection for tacos to Thai to kombucha to Hawaiian...they also have And Broth. At first glance would appear to be a standard vietnamese restaurant with its selection of noodle soups, including pho....but lo and behold in the bottom right of their menu lies the pho brisket sandwich on rye bread.Now having seen this creation before as it has exploded virally all over social media and all major food vloggers I have been reluctant if the product is worthy of the hype. Well, in this instance it absolutely was...As part of a food hall the ambience is loud and bustling. The service is polite and can expect a 15-20 minute wait so be patient.Granted this is an almost $20 sandwich so the price point is high but the quality and presentation is on point. It's layered with tender brisket, the garlic aioli provides a savory complement, the pickled onions giving a tangy contrast, and the fresh herbs allowing for balance but the secret ingredient is their version of a roast beef au jus except made out of their pho broth and it's nothing short of spectacular.The combination of these two food concepts are a tag team made in foodie heaven. It was a wonderful surprise to be floored by this establishment and cannot wait to see what they come up with next.

Beyond confused on writing my review because so many people had such great things to say about it. For $17+ on a sandwich, I had really high expectations and they were definitely not met whatsoever.It took quite a while for my sandwich to come out and when I saw it, I was a little excited because it was packed with meat - however when I finally sat down and got to eating it, it was so dry and flavorless.The bread itself was so stiff and dry, the meats were dry - dipping it didn't really help except make it messier for me. I also added seasoned fries to my order and man, were they definitely seasoned... with salt.Not worth the time & price.

I had really high hopes for this place, especially since I kept seeing it all over social media but I'm here to say that I should've tried a different vendor. Which makes me even more confused on how majority of the reviews are so high - maybe I just had a bad batch then?We came here on saturday for dinner with our friends and this place was open & didn't have a line so I opted to finally try it out. After a quick look at the menu, I decided to go with the Texan Pho (because I usually get brisket pho everywhere I go) and it was a whopping $17.49But about 10 minutes later, we go get our food and I was just so dissapointed in the whole presentation - it only went downhill once I tried the broth. The noodles were hard and clumped together, the beef was okay but SOMETHING tasted like wet mop. Not that I know what that truly tastes like but that's the best way I could describe it.I'll stick to my phoholics, thank you

The famous Pho sandwich has killer flavor - its complimentary, filling, and so unique. I can see why it's so popular!The problem is: it's just messy. Like over the top messy. And I go hard for BBQ and all food alike, but this is up there with one of the messiest meals I've had. I just think the broth is everywhere, the contents are slipping out, the bread is getting more soggy, and it's just overall enveloping. Love the creativity and still would recommend, but it's a tough eat while catching up or casually eating.

This place has been blowing up on social media and I had to come check it out, because if there's one thing about me, I love gimmicky fusion stuff.PARKING:Located in 4th street market. There's street parking as well as parking structures in the area, some of which offer free/discounted parkingWHAT I ORDERED:Pho Brisket SandwichTHE SANDWICH:Honestly, I was simultaneously impressed and disappointed. For the most part, it's kind of what you would expect this sandwich to be. The meat was flavorful but a bit dry, and it definitely needed the broth. The broth was amazing, though - super flavorful and well-spiced. The cilantro and onions were also a nice touch. The culprit here though was the rye bread, which got soggy quick, even before dipping into the broth! I wish they used a harder bread, something like a baguette that can hold up to a broth better. I noticed their BBH sandwich uses a different bread so I wonder if that one's better. In terms of portion size, this was a pretty hefty sandwich and I think it could easily be split between two people.SERVICE:Pretty friendly and quick.VIBES:Good options for seating in 4th street market, especially the outdoor seating which is nice. Tons of food options too for if you're bringing a group and people are indecisive.BOTTOM LINE:Wasn't blown away by the sandwich, but I definitely do want to come back to try the actual pho and perhaps the Bun Bo Hue sandwich!

Located in the 4th Street Market food hall in Santa Ana, And Broth is probably one of the more exciting concepts currently there. Their menu primarily features a variety of pho, but you should definitely go there to check out their two specialty sandwiches.At first, I thought the sandwiches might be gimmicky. They're similar to a French dip: you get a sandwich paired with a cup of broth for dipping (which I assume is why the place is called "And Broth" in the first place). I tried both the Pho Brisket on Rye and The BBH (Spicy Beef Sandwich). The brisket sandwich was tender and flavorful, but the BBH stole the show with its bold, spicy kick. Both sandwiches are pretty good on their own, but dipping them in the broth takes them to the next level. (Seriously, why wouldn't you dip? The broth is phenomenal!)The flavors are on point, and the portions are generous, with plenty of meat in each sandwich. I haven't tried their pho yet, but if the broth is indicative of the flavors of their pho, I'm sure I would enjoy it as well.If you're looking for a unique twist on classic pho flavors, And Broth is a must-visit!

YESSSS! Got the Pho Brisket Sandwich for takeout and my friend and I ended up eating it 2 hours later. Even so, it tasted amazing!!! Tender and juicy beef, accurate and strong pho flavor, and perfect ratio of ingredients. Tastes like a bowl of pho in sandwich form.

3rd time here and the pho brisket sandwich hits every time!!! My friend and I couldn't even talk because we were busy just chowing down. There's so much flavor in every bite and I love the basil chopped up in the sandwich. I asked for extra pickled onions and dip the sandwich with sriracha and hoisin on the side.

One of my resolutions for 2025 was to be more a little more sincere with myself and others, and it has come time for And Broth's unfortunate judgment. I have had And Broth bookmarked for quite a while now after first seeing it on social media, so I jumped at the chance to try a new place with a few friends on a Sunday afternoon, tucked away in the back of the 4th Street Market food hall.$20+ and a 20-25 minute wait for a single sandwich already had me questioning what I had roped myself into, and when the food finally was ready to be picked up my suspicions were confirmed. I was presented with chalk-dry cuts of cold, overcooked beef mashed between two pieces of soggy rye, accompanied by a plastic dish of scalding pho broth that lacked in flavor what it had in temperature. I've never been so confused by a bread choice - yes, nominally an earthier bread like rye might seem like it pairs well with a richly herbal broth like that of pho, but if I wanted something sour I would go someplace else and order canh chua. The provided scallion oil, pickled onions, and đồ chua (pickled carrots and daikon) fell flat at either making the dish taste better or more authentic. The sandwich itself was almost impossible to dip and eat as intended because its contents kept falling out, but at that point I was so hungry I didn't care and ended up scooping chunks of meat out of the broth with my fingers. Another one of my friends ordered the bún bò huế option, which had a more flavorful broth but with a similarly dry and tasteless protein option. We had to sit in silence a little afterward because of the mutual dissatisfaction. Stars are for the concept, ingredients (excluding the choice of rye), and easily accessible seating in a covered turf area.

Tried the Pho Brisket Sandwich and I have to admit, that it had tons of flavor! Tender, juicy and strong pho flavor, it hit the spot. This is kind of like Philippes in Chinatown, but with their own spin to it. You are also given a side of broth to dip your sandwich in.Come hungry since you get a nice generous portion!Definitely will be back to try the pho!!
