Root 66 Food Truck

Yummy vegan nachos! During our holiday stroll at the 10th Annual Humble Holiday Market -- my wife and I stopped at Root 66 for a snack. We're not vegan, but we're always looking for lactose free meals. We chose the brisket nachos from Root 66! It was sooo good! Loved the crunchy cabbage, seasoned vegan brisket and the jalapeños on the chips! We finished it and encourage others to go check them out.

I have had Root 66 quite a few different times but I feel like I always go back specifically for the nachos. I love nachos especially loaded nachos but the large amounts of dairy can sometimes hurt my stomach so I love the vegan nachos are an alternative way to get my fix without feeling any of the side effects that dairy has on my stomach. You can find them at the ABQ collective or occasionally around town for special events. Sorry to hear that they recently had a break in and have had to stop keeping their truck at the ABQ collective outside of when they're actually doing the events. They are a little bit more on the expensive side but vegan ingredients especially quality ones are definitely more expensive. They make a lot of their stuff from scratch, and the portions are very sizable in my opinion.

We came to the Root 66 food truck for an event, and were inspired by the short, seasonal nature of the menu to order one of everything. The prices are pretty spendy for street food, but the portions overall are generous. The proprietors were really approachable and knowledgeable about their vegan fare, which was also a point in the truck's favor. Because we ordered the whole menu, assembly of our order took about 15 minutes. A single dish would have taken less than 5 from order to completion.Now for the break down of the menu:Vegan Shrimp tacoWe'd never had vegan shrimp before, it was pretty spot-on for a plant-based popcorn shrimp. The slaw and guacamole made for a good meal. We can't do cilantro, so we had to leave off the pico, which would definitely elevate these to 5-star all on their own.Brisket NachoA solid 4-star loaded nacho with good beefy flavor from the vegan protein come hungry when ordering these, the portion is so much more filling even than it looks, and the chips melt to paste in the reheating Barbecue BurritoOMG! This is the clencher for 5 stars. It's a big burrito, so it's worth it's menu price. The plant protein inside tastes every bit as rich, smoky, spicy, and meaty as my favorite bbq ribs, only melded together with crispy slaw in a convenient burrito wrapping. Fresh out of the truck, cold as late-night snack, re-heated for a second meal, it's fabulous in all ways! We're definitely going back for more of these!!

As always the food from Root 66 was delicious!  Had their popular nachos with "brisket" and housemade queso and their new torta sandwich.  Plus the conchas from Palm Trees Confections Gallery which were so good. In addition, a % of proceeds goes to Animal Protection of New Mexico which is great!  Definitely recommend checking out one of their popups!

Brisket Nachos 5 stars!!!! Came across this vegan gem at the outdoor vegan pop up market at the collective!! The wait was about 25 minutes but worth every minute!! I've tried many vegan quesos and Root 66 has beat them all! I wish they'd have a restaurant. Hopefully one day!! I'd love to try the rest of their menu so I'll have to keep an eye on the trucks location!! Nice kid and older gentleman working beside him. Not sure if it's a family business or not but they're doing a great job!!

Some of the best vegan comfort food you'll ever find--with a Mexican/New Mexican twist! All of their food is amazing; the pollo asada burrito is my personal favorite. This food truck is a must try for vegans and non-vegans alike.

My transition to veganism was tough but was made drastically easier with the Root 66 food truck! I went to the re-opening on Jan. 22nd and was amazed with their food. Will definitely keep coming back! It is a must try.
