Hue-Chan and her team catered our wedding dinner, and honestly, it couldn't have gone any better. Unlike some other caterers, Hue-Chan's cooking isn't limited to a small menu of same old, same old items--you, know.... prime rib, salmon, etc. We presented her with a pie-in-the-sky wishlist of Central Vietnamese dishes and she not only took it in stride (offering thoughtful suggestions that tamed our over-ambitious lineup into a workable menu) but also knocked it out of the park when it came to execution. The dinner involved both pre-prepared dishes and items that were cooked to order live on-site, which delighted our guests and also ensured that everything was served with ideal freshness. The entire team was a joy to work with; they arrived on time, set up discreetly, and their friendliness shone through when they were cooking and serving our guests. The flavors were spot on, evoking our time living in Da Nang, and really helped make our special day even more special. Communication throughout the process was perfectly professional. Ultimately, beyond the quality of the food and the professionalism of the staff, what really stuck out to us was how dedicated Hue-Chan was to ensuring that we were taken care of, so that we weren't distracted from enjoying the big day.

I am part of a group of family and friends that likes to get together for fun and feasting two or three times each year. Owing to the pandemic, we have not been able to do this since Yuletide 2019. Sensing a break in the COVID clouds, I wanted to get the gang together in March 2022. One thing was for sure, I did not want to cook and serve---I wanted to mix and mingle. Became aware of Chef Hue-Chan Karals and her Open Kitchen team via the big ad she took out in this year's program for Santa Fe Pro Musica. I got in touch and asked the Chef what she could do. The answer is "almost anything, anywhere." We chose to dine in at Open Kitchen in Santa Fe. Chef Hue-Chan worked with me to put together a menu of Irish delicacies in honor of Saint Patrick's Day. The rooms at Open Kitchen are attractive, and the staff skilled and attentive. Hue-Chan's menu of five courses was perfect from beginning to end. Delicious! Service was unobtrusive and impeccable. If you want to splurge and do it up big, Open Kitchen is the place to call.
