December 30, 2024: After the Pantomine blend and single origin from Burundi that I picked up in early December, I next tried the Greensleeves darker roast. I found this to be quite versatile, and I tried a number of different algorithms including the Cremina lever, short and sweet, 1980s, trad lever, blooming espresso and .... I did grind 1 to 3 clicks coarser on the Commandante C40 with the darker roasted Greensleeves as one would expect, but on two occasions I went the other way to 2 clicks finer. I think the Greensleeves did best with those presets that have a preinfusion and even with the longest preinfusions. I was more pleased with shorter 18:28 pulls than my usual aim of 18:36 on most of the presets. I did not achieve a 18:40, and I probably need to try again. The Greensleeves gives one a lot of options on which way to go. Very good body this Greensleeves! As a result of my tinkering, and also because I had unexpected company, I ran through the bag quickly and have been out of beans the last four days, as Tom took a few days off ( not his fault -- he had told me). In desperation I visited 35 North on their re-opening day 12/28/24 but they had not started roasting although the roaster is still there and disappointingly they did not seem to know when they might start roasting again. Maybe the smartest thing is for 35 North to outsource the roasting to Tom at Odd Box.

Best coffee in Santa Fe, hands down. Highly recommend the Lima Cooperative dark roast if darker roasts are your thing. Their Capim Seco coffee is an excellent light roast.
