We pulled into a truck stop for fuel and there it was, a simply lit little taco truck in the middle of nowhere. It was in front of a truck wash and across from the fuel station. When you are in an 18 wheeler, eating hot dogs whole weeks at a time, you can really appreciate fresh food.I opted for their al pastor (spicy pork) taco and my partners got a mix of al pastor and desebrada con papa (shredded beef with potato). The soft taco actually had a crust from the hot flat top, adding a very addicting texture. My spicy pork was very tender and had the perfect seasonings. I do miss actual slices of grilled pork, instead of this shredded one. Either way, the flavors was out of bound. The shredded beef with potatoes was equally good in flavor and much more filling.The food was fresh so you do have to wait for a bit. Pricing was very affordable, ranging from $1.25 to $5, and they were delicious! Every time we stop by this fuel station, I will make sure to come back. It is very out of the way, so if you happen to already be here, do not miss a chance to enjoy their food. Also, owner Carlos is polite and excellent with customer service.

Yea if you're stopping at the flying j for fuel, rest, or anything I'd advise you go ahead and scoot over to the taco truck. No need to say anything else
